Dr Bethany Duffy

Dr Bethany Duffy is a HCPC Registered Dietitian and researcher at the Nutrition Innovation Centre for Food and Health (NICHE), Ulster University. She holds a BSc in Dietetics and a Masters by Research (MRes) in Life and Health Sciences. Bethany’s MRes and PhD research have focused on the role of riboflavin and metabolically related B vitamins in pregnancy, and their impacts on maternal blood pressure, anaemia risk and offspring health.

Bethany has been recognised for the quality and rigor of her early-career work, receiving the prestigious Micronutrient Forum Early-Career Award (2023), and winning the Nutrition Society Irish-Section Postgraduate Competition (2024).
